Sous Vide – how it works
  • Vacuum sealing the product in a plastic bag by removing the air.

  • Cooking meat, fish or vegetables at temperatures up to a maximum of 80 °C.

  • Cooking in a water bath at a constant water temperature between 54 °C and 80 °C.

  • The flavorings and aromas are fully retained in the bag during the cooking process.

  • The addition of spices and herbs intensifies the flavor.

  • Since a crust cannot form during vacuum cooking due to the comparatively low temperatures, it is recommended to briefly sear the food before or after vacuum cooking to achieve the full flavor.

Sous Vide

One technique. Countless benefits.

Sous vide cooking has become indispensable in Michelin-starred restaurants. The advantages in preserving flavor and quality are simply too great. But sous vide also offers exceptional benefits in its application. With sous vide, WFS essentially outsources a large part of the preparation process. Depending on the product, perfect cooking temperature, flavor preservation, and perfect texture are guaranteed. In the on-site kitchen, the only remaining task is to heat and plate the product according to easy-to-understand instructions. This allows even untrained staff to prepare dishes at a Michelin-star level.

Sliced specialties

As one of the few companies in Germany, WFS not only specializes in ham and sausage production, but also in the perfect sliced meat. Regardless of the slice thickness – whether a thick, round slice or a wafer-thin one – WFS can reliably supply both small and very large quantities, in bulk or pre-packaged and labeled under a private label.

With a historically rooted focus on meat products, WFS is aware of the associated responsibility. Accordingly, WFS conscientiously avoids food waste wherever possible. This applies not only during production but also throughout every step of the supply chain, from purchasing ingredients according to demand and using as many raw materials as possible to serving food waste-free to the customer.
